How to Make Roast Chicken, Rorence can help you

Ingredients:

1 whole chicken (about 4-5 lbs or 1.8-2.3 kg), giblets removed

2-3 tablespoons olive oil

Salt and freshly ground black pepper

1 lemon, quartered

A handful of fresh herbs (such as rosemary, thyme, and parsley)

4-5 garlic cloves, peeled

1 onion, peeled and quartered

Optional: Vegetables like carrots, potatoes, and celery for roasting

 

Instructions:

  1. Preheat the Oven:

 a.Preheat your oven to 425°F (220°C).

 

     2.Prepare the Chicken:

 a.Pat the chicken dry with paper towels. Removing excess moisture ensures a crispy skin.

 b.Season the chicken cavity with salt and pepper. Stuff it with lemon quarters, fresh herbs, garlic cloves, and onion quarters. This will infuse the chicken with flavor as it roasts.

 c.Tie the legs together with kitchen twine. Tucking the wingtips under the chicken helps them cook evenly without burning.

 

  1. Season the Chicken:

 a.Rub the chicken all over with olive oil. This helps in browning and crisping the skin.

 b.Generously season the chicken with salt and freshly ground black pepper. Seasoning liberally ensures a well-flavored, delicious roast.

 

  1. Prepare the Roasting Pan:

 a.Place a roasting rack inside a roasting pan. If you don’t have a rack, you can place vegetables like carrots, potatoes, and celery in the pan to lift the chicken off the bottom.

 

  1. Roasting the Chicken:

 a.Place the prepared chicken on the roasting rack or vegetables in the pan. Roast in the preheated oven.

 b.Roast the chicken for about 20 minutes per pound (450g) plus an additional 15 minutes. For a 4-5 lb chicken, this should take approximately 1 hour to 1 hour and 15 minutes. The internal temperature of the thickest part of the chicken (not touching the bone) should reach 165°F (74°C).

 

  1. Rest and Carve:

 a.Once the chicken is cooked, carefully remove it from the oven. Let it rest for about 15-20 minutes. Resting allows the juices to redistribute, ensuring a moist and flavorful roast.

 b.Carve the chicken by first removing the legs, then the breast meat. Serve with your favorite side dishes and enjoy your perfectly roasted chicken!

 

  1. Optional Gravy:

 a.If desired, use the pan drippings to make a flavorful gravy. Add some chicken broth, a bit of flour, and stir until thickened over medium heat.
